You will get to know about our ground breaking approach of building the best hardware for it.<\/p>\n<p><strong>GERMAN VERSION BELOW<\/strong><\/p>\n<h4><strong><u>BENEFITS<\/u><\/strong><\/h4>\n<p>One thing that might have influence on the beer quality are unpleasant hopresins and other by-products being collected during the rocky head state of the main fermentation. These could be easily removed with open fermentation &#8211; simply by skimming them of.<\/p>\n<p>Another benefit is the ability to track the viability of the yeast culture. By observing the appearance of the different head states during fermentation, it is often possible to check the viability of the yeast. This means how happy and healthy those little fellows are.<\/p>\n<p>For visitors of a brewery, open fermentation gives the opportunity to have an insight into this part of the brewing process, which is often hidden behind stainless steel.<\/p>\n<h4><strong><u>INNOVATION<\/u><\/strong><\/h4>\n<p>Our goal has been to design a completely <a href=\"https:\/\/www.kaspar-schulz.de\/insight\/schulz-cip-mobile\/\">CIP<\/a>-able tank with minimum release of aerosols during cleaning. The design was set to be elegant, simple an functional at the same time.<\/p>\n<p>To achieve this minimal aerosol load during cleaning, a process avoiding harmful spring or splashing of detergents were invented. By engineering a super even edge for the CIP overflow, cleaning of all product-touched surfaces is possible by laminar flow. Manual scrubbing is no longer necessary.<\/p>\n<p>Another positive aspect is that the pipes for the process were hidden and just put underneath the insulation, so that the main purpose is not being distracted of this vessel. Furthermore it just looks nice and clean as well.<\/p>\n<p>Next to the bottom fermenting version, we have solutions for top fermenting beers as well. Therefore, a smart yeast harvest device is implemented into the same design.<\/p>\n<h4><strong><u>SCHULZ TECHNOLOGY<\/u><\/strong><\/h4>\n<p>Michael Tr\u00fcbswetter, brewmaster of Eichenhofener Schlossbrauerei, named the main reasons they decided for an open fermentation tank of SCHULZ:<\/p>\n<ul>\n<li>They can build a personal relationship to their beer by having a daily look on the beer besides their lab-analysis<\/li>\n<li>They have the possibility to get rid of the unpleasant bitter substances by skimming of the head state.<\/li>\n<\/ul>\n<p>Michael is very confident with not only the CIP overflow solution for cleaning, but as well with the CO2 exhaustion technique, where the carbon dioxide is moved outside with a vacuum pump which is connected to the CIP overflow channel.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>&#8211;DEUTSCHE VERSION&#8211;<\/strong><\/p>\n<p>Offene G\u00e4rung ist eine der meist diskutiertesten Techniken beim Brauen.<\/p>\n<h4><strong><u>VORTEILE<\/u><\/strong><\/h4>\n<p>Unerw\u00fcnschte Hopfenharze, sowie andere Nebenprodukte k\u00f6nnen die Bierqualit\u00e4t beeinflussen. Diese k\u00f6nnen aber bei der offenen G\u00e4rung w\u00e4hrend der Hochkr\u00e4usenphase in der Hauptg\u00e4rung einfach abgesch\u00f6pft werden k\u00f6nnen.<\/p>\n<p>Des Weiteren besteht bei der offenen G\u00e4rung die M\u00f6glichkeit die Aktivit\u00e4t der Hefe zu kontrollieren. Indem die unterschiedlichen Stadien der Fermentation beobachtet werden, kann die Vitalit\u00e4t der Hefe \u00fcberwacht werden, was einfach gesprochen die Gesundheit und Zufriedenheit der Organismen widerspiegelt.<\/p>\n<p>Brauereibesucher haben hier nat\u00fcrlich auch den Vorteil, dass Sie ein Einblick in den Teil des Brauprozesses werfen k\u00f6nnen, der sonst nur verschlossen hinter Edelstahl von statten geht.<\/p>\n<h4><strong><u>INNOVATION<\/u><\/strong><\/h4>\n<p>Das Ziel war ein kompletter CIP-f\u00e4higer Tank mit minimalem Aerosol\u00fcbertritt w\u00e4hrend der Reinigung. Ebenso sollte das Design elegant, einfach und funktional sein.<\/p>\n<p>Eine minimale Aerosolbelastung w\u00e4hrend des Reinigungsprozesses soll erreich werden. Deshalb wurde ein Prozess entwickelt, in dem unerw\u00fcnschte Spr\u00fchbelastung und Spritzer durch Reinigungsmittel verhindert werden. Durch einen sehr schmalen Rand f\u00fcr den CIP-\u00dcberlauf, ist es mit Hilfe einer Laminarstr\u00f6mung m\u00f6glich, ohne zus\u00e4tzliches manuelles Scheuern alle Kontaktfl\u00e4chen zu reinigen.<\/p>\n<p>Zus\u00e4tzlich wurden die Prozess-Leitungen direkt unter der Tankisolierung verbaut, sodass es keinen Einfluss auf die Hauptaufgabe des Tanks hat und es zudem \u00e4sthetisch aussieht.<\/p>\n<p>Neben der Ausf\u00fchrung f\u00fcr unterg\u00e4rige Biere gibt es ebenso einen offenen G\u00e4rtank f\u00fcr oberg\u00e4rige Biere, indem im gleichen Design erg\u00e4nzend ein intelligentes Modul zur Hefeernte verbaut ist.<\/p>\n<h4><strong><u>SCHULZ TECHNOLOGIE<\/u><\/strong><\/h4>\n<p>Michael Tr\u00fcbswetter (<a href=\"https:\/\/www.eichhofener.de\/index.php\/Start.html\">Eichenhofener Schlossbrauerei)<\/a> nennt die Gr\u00fcnde, wieso sie sich f\u00fcr ein offenes G\u00e4rungssystem von SCHULZ entschieden haben:<\/p>\n<ul>\n<li>Durch die t\u00e4gliche Betrachtung des verg\u00e4renden Bieres und der Hefekr\u00e4usen kann neben den Laboranalysen eine pers\u00f6nliche Beziehung zum Bier aufgebaut werden.<\/li>\n<li>Es besteht die M\u00f6glichkeit einfach die unerw\u00fcnschten bitteren Substanzen auf der Kr\u00e4usendecke abzusch\u00f6pfen.<\/li>\n<\/ul>\n<p>Michael ist nicht nur \u00fcber die CIP Reinigungsl\u00f6sung durch die \u00dcberlaufrinne zufrieden, sondern auch \u00fcber die Technologie der CO2 Absaugung.
